Oh cool, I hadn't heard about muting! I'd previously used the old.reddit filter, but quickly hit their 100 sub limit. Looks like muting has a more generous limit of 1000, but I've already exceeded that, so guess I'm stuck with this for now.
I've just slowly added subs as I've encountered them over the months, based entirely on my particular disinterests. Not sure how useful this will be to most people, but could be a good starting point if someone wanted to edit the list to their tastes.
@mica_, I wonder if you would consider allowing the user to put in their own subs, using a simple config-box similar to the one in https://userscripts-mirror.org/scripts/show/456615:

How did you decide which subreddits to add to the filter? Why /r/gaming (top 3 community), but not /r/aww (top 4 community)? [1]
